 how easy is it to take the top of an old soda syphon without cracking the top or breaking the neck of the bottle

You need a remover pez. Use mole grips or an adjustable the bottle will surely explode.

The tops are very soft pewter or other alloy, and mark very easily indeed! It can be done as Jez says, but you do absolutely need the right tools! I believe they used to use a bench-mounted 'cup' (for want of a better term!), slotted to receive the lever and nozzle, then special tongs to turn the split ring. (Better to have slight cloudiness or old contents inside, than a wrecked syphon cap, I think!)

 after 20   attemps  clamps wd40 swearing I clamped the red ring and got the best tool out a big hammer done the jop between the red ring and the top there is a sealant

OK! So this wasn't a metal cap! I would have worried less with a nylon/plastic cap! Glad you got the result you wanted!
